Asian Peanut Noodle and Vegetable Salad

  • Ingredients

    8 ounces whole wheat linguine
    1/3 cup light Asian sesame ginger vinaigrette
    5 tablespoons SKIPPY® Creamy Natural Peanut Butter Spread
    1 tablespoon orange juice
    1 cup thin strips cucumber
    1 cup (3x1/8x1/8-inch) julienned carrots
    1/3 cup chopped fresh cilantro
    1/4 cup sliced green onions

  • Instructions

    Cook linguine according to package directions; drain. Rinse under cold running water until completely cool. Meanwhile, in large bowl, combine vinaigrette, peanut butter and orange juice; mix well. Add remaining ingredients; toss to coat.
